Wine Pairing: The Best Selections for Your Favorite Cuts of Meat

Wine PairingWhen it comes to pleasing the palate, there aren’t many culinary combinations that can top a good glass of wine with a delicious steak. Choosing the best wine to go with the right cut of beef isn’t as simple as picking out something red or white. You might be comfortable taking a restaurant server’s suggestion when you’re out for a nice meal, but what about when you’re at home preparing dinner for your family? Sometimes the choices can be overwhelming, or we feel we just don’t know enough about meat or wine to make a confident decision that will enhance the dining experience.

One of the reasons that red wine pairs so effortlessly with steak is because the tannins in the red wine help enhance the beef flavor. Steak, in turn, can make wine taste better too: The fat in the meat brings out the fruit flavors in the wine. While red wine is a classic choice for steak, the acid in white wine produces a similar effect on beef that the tannins in the red wine do. Since whites are generally served best chilled, they provide a great contrast to a hot sizzling steak.

So which wines are best with which cuts of steak? Fear not, we have some suggestions that will make you look and feel like an expert the next time you are planning a steak dinner at home that rivals the highest quality steakhouses.

Rib-Eye or Delmonico – Zinfandel

The rib-eye is arguably one of the most flavor-packed cuts of steak. This cut pairs nicely with the spicy undertones of Zinfandel. The flavors in Zinfandel contrast well with the meatiness of the rib-eye. Try seasoning the rib-eye with the bold flavor of paprika, which will give your steak a smoky spiciness perfect for a glass of Bordeaux or Cabernet Sauvignon.

Filet Mignon – Pinot Noir

The much-admired filet is the most tender, leanest cut of beef that also has one of the most subtle flavors, which is why it’s often served with sauces. It’s important to choose a wine that won’t overshadow the steak. Pinot Noir is higher in acidity but tends to be lower in alcohol content resulting in a light refreshing taste, adding to the flavor of the filet mignon without being overpowering. Feel free to choose a heartier pinot noir if the steak is prepared with a peppercorn sauce or other big flavor accompaniment. Malbec is another nice complement to the texture of a filet mignon.

NY Strip – Cabernet Sauvignon, Champagne

If you are a white wine lover, NY strip is the steak for you. Champagne is the best pairing here because its acidic qualities are similar to that of a red wine. The classic pairing for the NY Strip is Cabernet Sauvignon since its fruit tones work well with the bold flavor of the strip. Looking for something different? A lighter rosé can bring out the natural flavors of the steak when it’s simply seasoned with salt and pepper and served with a fresh salad.

Porterhouse or T-bone – Syrah

As we’ve mentioned, red wine is the best pairing for steaks with higher fat content. The porterhouse calls for a wine that can handle the combined textures of the tenderloin and the strip. Syrah pairs well because it’s not as heavy as a Cabernet Sauvignon, but it’s also not as light as Pinot Noir. The Cabernet will do, however, for a porterhouse that comes with a rich sauce.

Knowing which wine pairs best with various cuts of steak depends not only on the meat itself, but also on the steak’s preparation and any side dishes as well. The most important thing to keep in mind is that you truly can’t go wrong with any wine you choose, but being particularly selective will enhance the flavors.

St. Patrick’s Day conjures images of shamrocks, leprechauns, the color green, and other symbols associated with the patron saint of Ireland. How much do you know about this international holiday that people of every background have embraced for centuries?

A Brief History

St. Patrick himself wasn’t even Irish. He was born in Britain and arrived in Ireland when he was 16 years old. He became known for spreading Christianity, using the shamrock as part of his teachings: the three-leaf clover representing the Holy Trinity. The date of St. Patrick’s Day, March 17, marks the day it is believed that St. Patrick died in the year 461.

Ireland began observing St. Patrick’s Day with religious services and meals and the holiday has evolved over time as a celebration of Irish culture. While the shamrock remains a common symbol linked to Ireland, the four-leaf clover has emerged as a sign of good luck. The color of the shamrock, along with the reputation of Ireland as the “Emerald Isle” with its lush green landscape, eventually led to wearing green as a St. Patrick’s Day tradition around the world. Wear any other color on the holiday and risk getting pinched by a leprechaun, says folklore.

Corned Beef

It turns out the star of the customary St. Patrick’s Day dinner is really more of an Irish-American thing than it is a time-honored ritual straight from the motherland. The story goes that Irish immigrants to the United States couldn’t afford pork or bacon and corned beef was a less expensive alternative. Generations later, it has become a staple of the Irish-American diet and subsequently associated with the most Irish of holidays in the U.S.

Corned beef is brisket that has been cured in a salt brine. It gets its name from the “corns” of salt used in the brine. There are several types of corned beef.

Grey corned beef was made popular in New England. It uses a salt brine without any other spices. For this dish, the corned beef, cabbage, and root vegetables such as carrots, turnips, and potatoes are all boiled together. Even though many people only eat grey corned beef on St. Patrick’s Day, we make it for you most Thursdays throughout the year.

Red corned beef is more common in other parts of the U.S. and around the world. Otherwise known as New York-style corned beef, spices are added to the brining process of this meat. Butcher Boy has red corned beef available as well.

Ribs also work well using the same brining methods. But you don’t have to do it yourself! Butcher Boy prepares corned ribs in-house. Not only are they flavorful, it also takes less time to cook corned beef ribs.

What can you do with your leftover corned beef? You can you can make a delicious corned beef hash. Chop up the corned beef and cook it with diced potatoes, onions, bell peppers and various spices. For an enjoyable breakfast, serve the corned beef hash with eggs.

1. I’m trying to stick to my New Year’s resolution. Which protein is the leanest?

No matter the recipe, you don’t have to trade flavor for a healthy lifestyle choice. Replace ground chuck with ground sirloin or switch from Italian pork sausage to Italian chicken sausage. When you’re in the mood for a delicious cut of beef like prime rib, a short cut rump roast is a delicious leaner alternative.

2. I don’t see the cut of meat that my recipe calls for.

We understand how confusing it can be to wonder which meats are best for specific recipes. Sometimes the same cut of meat can be called by several names or the label at the store is different than what’s listed in the recipe. Let our butchers know what you’re preparing. It’s likely we have exactly what you’re looking for, but we can also help you select an acceptable substitute if necessary.

3. I generally stick to the basics like chicken, but I want to branch out and try something a bit different. What would you recommend?

We encourage ambition! Grilled or roasted chicken is delicious. But when it becomes a standard menu item, let us broaden your culinary horizons. How about lamb? This herb -crusted rack of lamb is fairly easy. Impress your family and friends with beef Bourguignon. We have just the right chuck roast for that. 4. My entire family is under the weather, and I’m looking to make a homemade bone broth. Where do I start?

Bone broth can be made with beef bones, pork bones, chicken bones, or a mix of all kinds. You can save them from any bone-in meats you cook – rinse them and store them in the freezer until you’re ready to make the broth – or you can buy the bones directly from us. The best bones for bone broth are those that are high in collagen from cartilage, such as oxtail, short ribs, and marrow bones. Meaty bones, from short ribs, oxtails, or a shin bone with meat provide a lot of flavor. You could also purchase a whole chicken and save the carcass for a delicious broth. The key to the best balance of rich taste and nutrition of bone broth is the slow simmer. Check out this recipe suggestion.

5. I’m having some friends over for dinner. What’s the best choice to feed a crowd?

Hosting a party that involves preparing a full dinner for your guests can be stressful. You want to make sure there’s enough food to satisfy everyone’s appetites and you also want to enjoy yourself without spending too much time in the kitchen cooking or cleaning up. Pulled pork is a great option for feeding a group. We also like beef options such as short ribs or roast tenderloin. Beef is full of nutrients, including essential amino acids, and vitamins like zinc and iron. It helps to repair and build body tissues, as well as produce antibodies that will protect the body from infections, which in turn strengthens the immune system.

Meat is a critical component in steps toward a healthy body. You can work out as much as you want, and you will lose weight based on calories burned, but you won’t build muscle without proper nourishment. Muscles need the protein and energy that beef provides and cannot be replicated with supplements.

Making meat a regular part of your diet helps stabilize blood sugar levels, which prevents type 2 diabetes and other chronic conditions. When your blood sugar is stable, you are less likely to crave unhealthy foods between meals.

Poultry has a place in high-protein diet plans as well. It’s best to eat turkey and chicken without the skin as these are lower in fat. Purchase it skinless or remove the skin before you prepare it.

Between now and the big game in February, groups of friends and family are planning football watching parties. Whether you’ll be a host or a guest, we have a few ideas for celebrating with your fellow fans.

Party Space and Decor

Where will people be watching the game? For a crowd, consider setting up televisions in multiple rooms for them to spread out and move around. That helps provide more seating options but also can help with flow and encourage socializing. If one TV is the preferred option, some extra chairs or pillows on the floor will help make everyone comfortable.

Make the rooms where guests will gather festive with simple streamers, balloons, and football-themed paper goods. Choose the colors and small party favors based on your favorite team or the city it represents. Remind people to wear their favorite team’s gear.

Kids Play

Is your party family-friendly? Slightly sweet and perfectly juicy, a pork tenderloin is easy to prepare but will impress. Adding fresh, local apples to the roasting pan will give it a seasonal flavor.

Spiral hams are a crowd pleaser. Make it the centerpiece of your party buffet. A ham looks beautiful on the platter with its perfectly even slices, and is easy for guests to serve themselves. It tastes delicious warmed up, but it’s also great at room temperature.
