70 Years in the Merrimack Valley: A Family Legacy

From our beginning on a cold and snowy winter day in January of 1955 until now, 70 years later, Butcher Boy has been woven into the fabric of our neighborhoods and surrounding Merrimack Valley communities.

Even before Butcher Boy opened, the Yameen and Maroun families had an established history as a part of the U-Save Market on Broadway and the Thrift on South Union St. in Lawrence. Their first Butcher Boy store was located on a dirt road in Salem, NH, on what is now Route 28. Even back then it was a well-traveled thoroughfare between Boston and New Hampshire. It was a different time when everything in our meat case was priced at under $1/lb and families enjoyed daily homecooked meals. And who could forget our iconic refrigerator “Bake-O-Meter” that would spin to give home cooks the correct oven temperatures and how long to cook each cut of meat? Long before the internet, we were proud to be the go-to for cooking tips in this region!

It wasn’t long before our reputation for customer service and offering the highest quality meats was well established. Many of our customers visited us daily for the freshest ingredients. Others stopped by on their way to the Lakes region or other vacation destinations. As one of the few businesses open on Route 28 in those early days, we welcomed the thousands who passed by on their way to the Rockingham Race track or chose to do their weekly shopping on a Sunday when the Massachusetts stores were all closed due to the blue laws.

As the Merrimack Valley grew and evolved, so did Butcher Boy. We added a second store in a wooden building in North Andover in 1960, replacing what was formerly O’Keefe’s Country Store. At that time, North Andover was more farming than commercial. In fact, this particular neighborhood was almost named Stanleyville, and today you can find a boulder behind our current location with “Stanleyville” etched in it as a permanent reminder.

Did you know that our families also were in the restaurant business? In 1965 we opened the Butcher Boy Steakhouse in North Andover across the street from our store. It was known not just for its delicious steaks, but for its large open hearth and piano bar. Later, we opened a second Butcher Boy Steakhouse in Nashua, NH. After years of running restaurants in addition to our stores, we decided to focus on our core Butcher Boy Market business. Although the restaurants are closed, the good memories are so strong that people in the community still ask us to bring them back.

In the 1980s we made the decision to expand in North Andover. It took nearly a decade to realize that goal, but after over forty years in Salem, we completed our Osgood Street market and plaza project and relocated there in 1996.

Throughout the past seventy years, our story as an independent service business has been one of deep community roots, service, and strong growth. As we look back on how far we’ve come, we look forward to serving our customers’ next generations in the Merrimack Valley and beyond.

Celebrating 70 Years

Thursday, January 27, 1955, was a typical winter day in Salem, New Hampshire—cold and snowy. It also marked the opening day of Butcher Boy. Despite the weather, people from across the Merrimack Valley bundled up in coats, hats, and boots, to visit the new store. Behind the counter, Bill Yameen worked alongside Evon, Ken, Dan, Tom, and Joyce, ready to welcome their first customers.

Who could have predicted on that first day in 1955 that seventy years later we would still be here, family-owned and operated by the Yameen and Maroun family, going strong in North Andover? While we have evolved with the times, we have never wavered from our principles – to provide quality, value, and service while promoting local purveyors and serving as a valued community partner, providing jobs, and supporting local initiatives.

In those first years, Route 28 was a dirt road in Salem, but it led many from Boston to New Hampshire.  Massachusetts’ Blue Laws then in place meant that stores were closed on Sundays, so many of our customers made the regular Sunday pilgrimage to Butcher Boy in Salem, NH, to do their weekly shopping.

We want to take this opportunity to thank our dedicated staff and customers, many of whom have shopped here for generations. We appreciate you making us a part of your everyday, special occasions, and holiday celebrations for the past 70 years. Over the coming months we will be featuring special memories and reflections on our business over seven decades. Guest blogger Kellmy Rosado-Vargas is the owner of two Lawrence-based businesses, independent design consultancy Left Eye Creations and custom printing company LEC Print. But more personally, Kellmy is a foodie from birth, and he shares his story and recipe for Spanish Pulled Beef.

As a great Dominican descent foodie from Queens, NY, I am quite the cooking enthusiast. During the early days of quarantine, I went into my passion for cooking and trying new cuisines.

While I have been a New Englander my entire life, my foundation consisted of about 10 Dominican women cooking with relentless spices. Today my home is no different as I am married to a Venezuelan lady who happens to be of Cuban descent. Talk about a mix of flavors and cultures.

With that said, and although my heart is with Dominican and New England foods, I could not ignore my wife’s grandmother’s passion for food. She was an excellent cook, an exquisite host who lived for entertaining everyone. In one of her many gatherings, I was introduced to “ropa vieja,” which is nothing more than shredded skirt steak with a Spanish flair. I was hooked!

This stew-like steak is the perfect recipe for foodies and busy families alike since it could be made in big batches and frozen for up to 3 months. It pairs well with arepas, white rice, tacos, even pasta! It is so versatile and certainly a comfort food that hopefully will become part of your weekly rotation.

Ingredients:
  • 2 lbs of the skirt or flank steak
  • ⅓ cup of olive oil, mild blend
  • 2 large Spanish onions (one whole, one finely chopped)
  • 2 garlic cloves finely chopped
  • 1 green pepper finely chopped
  • 8 oz. organic can of tomato sauce
  • 1 teaspoon of salt
  • 1 Bay leaf
  • ½ cup of dry white cooking wine
Step 1:

Place meat and one whole onion in a pressure cooker/Instapot or a large pot (double the cooking time if choosing a regular cooking pot). Fill the pot with water until it is about 2 fingers over the meat. Cook meat on high pressure for 20–30 minutes.

Step 2:

On a separate large pan, sauté on medium heat the finely chopped onion, green pepper, and garlic with oil for about 5–7 minutes. Wait until the onions are translucent and the peppers have softened.

Step 3:

Take the meat out of the pot and shred it with two forks against the steak’s grain. Remove the whole onion from the broth and toss.

Step 4:

Merge shredded beef with the previously sauteed onions, peppers, and garlic onto the pan. Add all the remaining ingredients together with one cup of broth from the steak.

Step 5:

Let all the ingredients simmer for about 20 minutes at medium heat and add more broth as the sauce starts to evaporate. The beef should be in a runny sauce.

This recipe gets better the day after, so do not shy away from refrigerating it. Reheat it for leftovers, lunches, or dinner.

Chad Montrie, Variance – A Multi-Course Tasting Menu In Your Home

Variance is a lot of things, but what chef Chad Montrie aims to do consistently is serve exceptional food. Chad focuses on presenting fresh, seasonal, and fruit/vegetable-forward dishes. Variance’s cuisine is an inspired take on New American preparation with a Mid-South twist.

Although you wouldn’t want to cook and eat one (believe me, I’ve tried), a channeled whelk has at least a few things going for it. Among others, the sea snail’s shell puts pattern variation on full display. Years ago, when I was trying to come up with a name for my venture into the culinary universe, a friend picked up a whelk shell from the beach and brought it to the house. And there it was. The shell embodied how I like to cook, holding to tradition but making it current, changing dishes without straying too far. I want what I know about classical French cuisine and Mid-South foodways to be fully present in the dishes I prepare, but always with a twist. So, I called what I was doing “Variance,” and I took the channeled whelk for its symbol.

Chicken wingI grew up in Louisville, Kentucky (by way of Montreuil, France to Québec to Toledo, Ohio) and moved to New England in 2002. To make a living, I am a professor at the University of Massachusetts Lowell, where I teach a range of courses, including one on Food in American History. But I’ve also worked at Boston-area restaurants, including Café du Pays, in Cambridge, and Asta, in the Back Bay. The chef and owner at Asta, Alex Crabb, has taught me much of what I know about cooking. Drawing on this experience, next summer (2022), I’ll resume plans that the pandemic interrupted and operate a seasonal pop-up restaurant in Onset, on Cape Cod. In the meantime, I’ll be doing private dinners around Boston and in the Merrimack Valley. I can cook and serve a multi-course tasting menu in your home for up to fifteen people—a safe and comfortable alternative to dining out.

Although the Variance tasting menu ranges from course to course, and the dishes necessarily vary according to your taste, the focus is on what’s local, seasonal, fresh, and delicious. Radish with smoked haddock pâté and fried dulse. Roasted tomato soup with basil and lemon verbena oil. Butterhead bibb with tahini citrus vinaigrette and grapefruit. Pickled golden beets with dill cream and fried chicken skin. Brown sugar Cornish hen with buttermilk grits and smoked mushrooms. Lamb chops with shredded brussels sprouts and toasted hazelnuts. Lime sorbet with lime curd and pecan crumble. Almond cake with orange sauce and sweet mascarpone cream. Rosemary pine nut brittle. The list goes on.

If you’re looking to support the charitable organizations that directly give back to those in our community, check out the Emmaus House Tree of Love campaign. They provide shelter and critical services to our most vulnerable neighbors in need, all year long. The Merrimack Valley YMCA offers several options to support its youth programs and the children who use them this holiday season, as well as a holiday toy drive. Monetary donations can be made directly to the Lawrence YMCA Food Pantry here, and non-perishable food or personal care items such as toothpaste and baby wipes can be dropped off on Wednesdays from 3-5pm at the Andover/North Andover YMCA.

The North Andover Police Department is hosting ‘Cram-a-Cruiser’ events to benefit the North Andover Food Bank on Saturdays in December. If you’d like to donate, please bring non-perishable food and personal care items to the Middle School. See dates, times, and details here.

Did you know that Butcher Boy carries some amazing GF products? Breads

Julie's Z Breads Gluten FreeIn addition to Aleia’s (Branford, CT) bread and Udi’s tortillas, bagels, hot dog and burger buns (located in the freezer section), look for half loaves from Woburn-based Something Sweet Without Wheat (freezer) and Julie’s Z Breads (Ashland, MA) Gluten-Free Zucchini bread (located with the fresh bread in the bakery section). You can also find GF bread-based staples like gluten-free bread crumbs from Aleia’s and gluten-free Panko from Ian’s Natural Foods (Framingham, MA) in the packaged bread aisle, top shelf. Add the perfect crunch to your salads with Aleia’s GF Croutons – try the Parmesan flavor!

Crackers

Onesto Crackers Gluten FreeButcher Boy stocks several varieties of gluten-free crackers for your snacking and entertaining needs. My current favorite is Onesto Hand Crafted Crackers (West Newbury, MA), Everything flavor. Sauces, Marinades and Dressings

Gluten is often hidden in these types of products, but Butcher Boy carries many great Gluten-Free options. I love using a high-quality GF BBQ sauce (No HFCS), like Stubbs Original or Bone Suckin’ Sauce in GF Pulled BBQ Chicken and Pork, as a marinade for grilled chicken, or simply as a condiment. Butcher Boy does not skimp in the GF dessert department! Some of my family’s favorites are the Maine Pie Co (Biddeford, MA) gluten-free pies. The apple and wild blueberry pies taste like homemade. The dark chocolate tart is, well, you will just have to try it for yourself!

Pita bread from Korbani’s Bakery is like no other. For more than 30 years, the Korbani family has been making traditional Middle Eastern bread in Methuen. Mary, her daughter Kristen Korbani, and family are continuing the tradition. Look for fresh, local Korbani pita bread at Butcher Boy.

 

The story of pierogi from Jaju goes back even further. The family business began seven decades ago in western Massachusetts, where Vanessa White and her sister Casey grew up learning to cut, stuff, and seal the Polish food staple. The women brought their grandfather’s recipes for pierogi to our area in 2015 and have since perfected both traditional and creative pierogi flavors for their New England customers who crave a pierogi fix that doesn’t taste mass-produced.
